A couple of weeks ago, I posted on my Instagram stories about a “skinny” version of BBQ Chicken pizza, and you guys went crazy over it, so I’m finally writing down the recipe.
I love all kinds of pizza, but all the carbs don’t reciprocate the love, so I’ve found that replacing my dough with a whole wheat tortilla, helps with the bloat that normally comes after a pizza sesh.
Best part, you only need SIX ingredients! Of course, you could add or leave out some items, but this is what I like to use.
I mean who doesn’t love simple + practical?
Ingredients:
-Rotisserie Chicken
-Whole Wheat Tortilla
-Red Onion
-Cilantro
-Favorite BBQ Sauce
(You can use any sauce + to make it really skinny, you can go with a sugar free one)
-Favorite Cheese
(this time I went with Shredded Pepperjack, and I love the kick it gave)
Preheat oven to 425 degrees. Shred Rotisserie Chicken and add it to a pan. I like to add a little Olive Oil to the pan before I put the chicken in, but you can skip this if you want.
On low heat, warm the Chicken. I added a little bit of this Chipotle Seasoning but it’s optional, and would be fine without it.
Once Chicken is warm, pour on a little BBQ sauce to lightly coat the Chicken. Don’t go crazy, just a bit will do.
While the Chicken is finishing up, place your tortilla’s on a sheet pan.
If you don’t have nonstick pans, I would spray something on the pan before you place the tortilla on it.
Add 1 TBS of BBQ sauce, to each tortilla.
Then layer your pizza. I go in this order.. Chicken, Cheese, Onions + Cilantro.
Let it bake in the oven for 5-7 minutes.. or until cheese is bubbly!
