My go to lunches lately have been salads… or a handful of almonds.. honestly it just depends on my mood. But if I was on my game everyday, this Chopped Cobb Salad would be one that I picked for every day!
It’s basically my spin on the Chick-fil-a market salad, just switching out the grilled chicken for deli meat + bacon! I mean who doesn’t love bacon?
Before I get started on all of the ingredients, let me tell you about a little tool that is LIFE CHANGING! I don’t know about you, but I prefer a chopped salad, and this salad chopper ups your salad game 100%. I ordered mine off Amazon and it was only $14! Ok, now to the yummy stuff! You can add anything you want to your salad, but I went with Romaine Lettuce, Blue Cheese, Turkey from the Deli, Bacon Crumbles, Sliced Almonds, a hard Boiled Egg + some Strawberries.
You really don’t need a lot of anything but the lettuce, so just eye it as you see fit!
I put everything into a large bowl, cut it up with my chopper and then added my dressing! Gave it a little toss and it was ready to go!
If you’re not a fan of store-bought dressing, you should try this Apple Cider Vinaigrette! It’s amazing!
Disclaimer: please don’t try this salad thinking it’s healthy… because while it’s packed with a bunch of protein ( I tend to eat a lot of high protein/low carb meals) this dressing isn’t the best! It’s not the worst, but there’s def healthier out there. So if you want to save some sugars + carbs, you might want to stick with something different.
Apple Cider Vinaigrette Recipe
3/4 cup of Olive Oil
4 tablespoons of Apple Cider Vinegar
4 tablespoons of Honey
2 tablespoons of Pineapple Juice
2 teaspoons of Lime Juice
1 teaspoon of Salt
1 teaspoon of Cracked Pepper
1/4 teaspoon of Garlic Powder
1/4 teaspoon of Onion Powder
1/8 teaspoon of Cayenne Pepper
1/8 teaspoon of Xanthan Gum
1 tablespoon of Water
1 teaspoon of Sugar
Mix Xanthan Gum, Water and Sugar in a bowl, until smooth. (If you’ve ever had the ACV dressing from Chick-fil-a, you know that it’s a thicker dressing… the xanthan gum is what makes it a gel base) Add in all the other ingredients and mix together. It should look like this when you’re done.
You can store it in anything, but I put all of my homemade dressings in this cute little thing! Isn’t it adorable? Here’s the link!
